Lleu's 2 couscous recipies
In /g and on irc I have been asking around for couscous experiences, I got a bag myself and this week I tried out two receipes. No pictures, but here they are ; ) Both vegetarian! ; D
The warm couscous was ok, but I don't like the dry texture of couscous like that; that's why I got to that couscous salad. The guys really liked the warm couscous though, so I posted it anyway.
Couscous with dates and creamed cheese
- couscous (for x people) (2,00 eu)
- frog peas from a can (err thesaurus gave me this one ; ) (0,90 eu)
- peas (0,50 eu)
- dates (0,60 eu)
- creamed cheese (0,80 eu)
Seasoning options (still perfecting this)
- cinnamon
- chili powder
- grinded pepper and salt
1. Make the couscous like said on the package (adding boiling water in gradations, covering it up; it's usually done within minutes).
2. In the meanwhile, get the pits from the dates and cut them open vertically.
3. Smear some creamed cheese in the dates, where the pits used to be.
4. When your couscous is ready, season. I added chili powder, cinnamon, pepper and salt myself, I can imagine mint will taste great with it too. Mix well into the couscous.
5. Throw in the peas and the frog peas, mix well.
6. Serve with the stuffed dates.
Cold couscous salad
- couscous (for x people)
- cucumber
- black olives (no pits)
- sun dried tomatoes
- feta cheese
- frog peas
Dressing:
- lemon juice
- creme fraiche
- dillpowder
- chilipowder
- grinded salt and pepper
1. Make couscous according to the package. When it's done, let it cool.
2. Cut up your cucumber and feta in squares, cut the sun dried tomatoes finely.
3. Grab the cooled off couscous, jam a spoon of creme fraiche, a good few squirts of lemon juice, a load of dillpowder, some chilipowder and bring it to taste with salt and pepper. Mixmixmix ; )
4. Add the cut up cucumber, feta and sun dried tomatoes, at the black olives and the frog peas.
The good thing about this stuff (besides it's summery, fresh and good) is that you can make large quantities and leave it in the fridge for snacks ; ) I served it with bread and bruschetta.
